17 inches…

I’m talking about my butternut squash. What did you think I was referring to, my waistline…? Ha-Ha!

Take a look at my first Butternut Squash of the season. Wahooooooooo! I am so proud. Feast your eyes on all 17 inches of this baby.  This is the largest BN Squash I have ever grown in my life!  I cooked it (only seems right to not assign a gender to my food) yesterday. I made a vegan butternut squash curry soup with cilantro and it was, yum-o-licous (if I say so myself).

And this picture is of my cat Sam, who was keeping me company Sunday morning, 5:30 a.m. while I was having coffee.  In fact, this is a pretty regular routine where he lies across whatever I’m reading/writing at the kitchen table, which in this case, is my food/exercise journal that I review with my fabulous nutritionists in Cambridge.  I rely on her guidance to ensure I’m eating a well-balanced, vegan diet.

Oh and no that’s not cow’s milk in my coffee, that is hazelnut So Delicious Coffee *creamer* which truly is Soooooooooo Delicious!

    • Thanks BP. I didn’t have a recipe to follow, I basically just winged it. Maybe I should have posted the recipe (but i hate to bore people with too much detail).

      Sammy is my little buddy (and 1 of my 5 cats). His full name is: Samwise Gamgee. He’s been with me through thick and thin — most recently, my divorce.

        It’s all good. We are not like other divorced couples. My Ex and I are the best of friends. We hang out at least one night a week either having dinner at our favorite Indian joint, renting or going to the movies, or taking a drive. Plus, he is a contractor so he has been teaching me how to remodel my recently purchased outdated 1915 home. Suffice it to say, we are not your *typical* divorced couple. In fact, we talk on the phone almost every day. Most people don’t get it, but it works for us. 🙂

      • I totally get it…congratulate yourselves for rising above what is often a not so pleasant experience. You will help each other to move forward by staying friends – (that last statement would not make sense to a lot of people but I’m sure it will to you) :0

        He just called to invite me to his family’s Thanksgiving which will be taking place at his uncle’s new restaurant that opened about 6 months ago. I told him I’d think about it, being a vegan, I’m not a fan of Thanksgiving.

      Well I didn’t follow a recipe, I just winged it but I would be happy to give you what I have. That said, please bear with me as I try and recall how I made the soup. I’ll post an update to my blog so you can read it more thoroughly. And I’m flattered you ask for a recipe. That means a lot! 🙂
